What might look like a plate of rojak is actually my awesome masterpiece, Roasted Pork in Japanese Curry, with a hint of Capsicum.
First you rub some salt on the pork (especially the skin!) and season it in some soy sauce. Then you roast it for like 45 minutes at 225°C (but this varies according to the size of your pork and the capability of your oven).
While roasting, you can prepare the garlic, onions, potatoes and carrots. For potatoes, remember to have some that is fairly thinly sliced so that when they can "blend" easily into the curry to make the curry sauce slightly thicker.
So you pan-fry the onions first, then add the garlic, then potatoes and lastly, carrots. When they are all kinda like a wee bit golden brown (onions are a good gauge), add enough water to just cover everything, not too much though. Then you wait for the water to boil.
Once it starts boiling, add the curry sauce cubes and once you get a good blend of curry, add the chocolate (sparingly!). Too much chocolate would spoil the taste so about 1 or 2 cubes of Cadbury's is usually enough.
I add the capsicums last because I wanted to get the "original" curry flavor right first but I guess if you're confident, you can always add it at the start together with the rest of the vegetables.
By now, the pork should be well roasted. Dice 'em and throw 'em into the curry. Keep stirring occasionally to prevent some "skin" from surfacing. Cook for another 10-15 minutes for the curry to absorb the flavor from the roasted pork.
Serve while it's hot. Or even better, serve it the next day. As Hyeyoung says, overnight curries are the best and I totally agree! :)

Meanwhile, I'm trying to convince myself that it's sooo yummy 'cos it's going to be my lunch and dinner for the next few days. Due to the lack of time and motivation, I think I'm going to have shitty food for the following few weeks. But, but... I will definitely pamper my tummy (and Hyeyoung's) once we're done with the finals.
